These days we have a few hidden away spots in Rhode Island that have great Mexican food, but when in doubt I can always make it at home. I love baja style tacos, and while it’s not authentic, I like to make a quick version with lime juice and sour cream. The red cabbage slaw adds some good freshness and crunch! Save Print Pork Tacos with Cabbage Slaw and Lime Crema Prep time: 10 mins Cook time: 10 mins Total time: 20 mins Serves: 6 servings Ingredients for the seasoning: 2 teapsoons garlic powder 2 teaspoons chili powder 1 teaspoon ground cumin 1 teaspoon dried oregano 1 teaspoon paprika ? teaspoon salt ? teaspoon ground pepper 1 pound ground pork 1 small red cabbage ? cup sour cream 2 limes 1 tablespoon plus two teaspoons olive oil 3 tablespoons tomato paste ? cup water cilantro for garnish 4 radishes, thinly sliced 6 corn or flour tortillas Instructions Cut the cabbage in half and remove the inner core. Slice into very thin strips. Juice one lime. In a medium bowl, mix the lime juice, 1 tablespoon olive oil, cabbage and salt and pepper to taste. Set aside. Juice the remaining lime into a small bowl, and whisk in the sour cream to make the lime crema. In a small bowl, mix together the ingredients for the taco seasoning. In a large skillet, heat two teaspoons olive oil over medium-high heat. Add the ground pork and saute until browned on all sides, while breaking it up into small pieces. Add the taco seasoning and tomato paste, and cook until fragrant, about 3 minutes. Add ? cup water and simmer until thickened, about 1-3 minutes.
